Ingredients
2 cups cooked chicken breast, shredded or cubed
1 cup plain Greek yogurt
1 tbsp Dijon mustard
1 tbsp lemon juice
1 tsp honey (optional, for a hint of sweetness)
1/2 cup celery, finely chopped
1/4 cup red onion, finely chopped
1/2 cup grapes or apple, diced (optional for sweetness)
1/4 cup chopped fresh parsley or dill
Salt and black pepper, to taste
4 whole-wheat tortillas or wraps
Fresh lettuce leaves, for layering
Instructions
Prepare the dressing
In a large mixing bowl, combine Greek yogurt, Dijon mustard, lemon juice, and honey until smooth.
- Add chicken and vegetables.
Add shredded chicken, celery, red onion, grapes/apples, and herbs to the bowl. Mix well until everything is coated with the dressing.
- Season
Taste and season with salt and pepper as desired.
- Prepare the wraps
Flatten a tortilla, place a few lettuce leaves on top, and spread the chicken salad mixture on top.
- Wrap it up.
Fold the sides and roll it up tightly. Repeat with the remaining wraps.
- Serving
Cut in half and serve immediately or wrap in parchment paper for on-the-go use.
For extra crunch, add chopped almonds or sunflower seeds. These wraps also taste amazing if you let the chicken salad chill for 30 minutes before assembling.
